Chutney-Tini-Sour takes the familiar structure of a sour and steers it in a savory, herbaceous direction. Instead of leaning solely on spirit, citrus, and simple syrup, the recipe uses a homemade Indian-style green chutney to bring in cilantro, mint, ginger, lemon, sugar, and salt. The sour is one of cocktail-making's oldest templates — spirit, something sour, something sweet, sometimes rounded out with egg white — the backbone behind drinks like the Whiskey Sour, Daiquiri, and Pisco Sour, and flexible enough that swapping syrup for chutney still fits the mold. Pisco's story begins with the Spanish, who brought vines to Peru in 1532 to supply wine for the church; vineyards took root around Ica, where the dry coastal climate proved ideal for grapes, and the spirit is made much like Cognac but bottled clear and unaged. Viejo Tonel Acholado Pisco forms the base — "acholado" meaning a blend of pisco grape varieties for a broader aromatic profile — joined by Tres Agaves Blanco Tequila for bright agave character and concentrated pineapple syrup for tropical sweetness, while egg white gives the drink its silky texture, dry-shaken first to aerate, then shaken again with ice to chill and dilute.

1.5 oz Viejo Tonel Acholado Pisco
0.75 oz Tres Agaves Blanco Tequila
0.25 oz homemade green chutney (cilantro, mint, ginger, lemon juice, sugar, and salt, blended together)
0.25 oz concentrated pineapple syrup
1 egg white
Steps
Add all ingredients to a shaker and dry shake (no ice) to aerate the egg white.
Add ice and shake vigorously to chill and dilute.
Strain into a coupe glass.
Garnish with a fresh flower (optional).
